Easter Cupcakes

It was discovered on Friday afternoon that Easter eggs appear to have sold out awfully quickly this year. Since we (myself and my boyfriend) had been away over the last week, celebrating a friend's Birthday, we had left our Easter egg purchases a little too late. This wouldn't really be a problem, but he had already told his Mum he would buy her an egg.

So, instead, I offered to bake! The results of this morning's (yes, a day late) baking session:





These are just a simple vanilla sponge (with a teaspoon of baking powder to make them nice and light) topped with regular butter cream. I am yet to master the art of making the perfect pipe-able icing (That is Rosie's forte!), so this icing was still a bit too soft. I also do not have a "grass" nozzle, so these are not exactly as I'd imagined.. but they still look cute, and are delicious - even if I do say so myself! 

I created the rabbits and chicks by filling some moulds with melted chocolate and letting them set. Obviously, the eggs are just regular mini eggs from a packet.

I hadn't baked cupcakes in quite a while, so it was very much enjoyed! Especially with the boyfriend helping with all the mixing. Hopefully next time I can successfully make a stiffer butter cream...
