The Honeycomb Craving

Today, my boyfriend's brother and his (pregnant) girlfriend came round. She's about 5 months gone, and was telling us about her cravings. She was getting rather animated when describing how much she wanted a honeycomb sundae and how she wishes she could make them at home.

Now, i've never made honeycomb before, but i'd heard it was pretty easy. So, after a quick search for a simple recipe online, I was straight in the kitchen, measuring sugar and golden syrup into a pan.

It melted and bubbled away for about 10 minutes, before it went brittle when dropped into some cold water. After quickly stirring in some bicarbonate of soda, it rapidly began to fizz and expand, and I turned it out into a parchment lined tray.

 

The dark patches are where I tried to spread the honeycomb around, and it didn't like it. I had a lot of fun breaking this bad boy up into chunks! Combining it with some clotted cream ice cream, butterscotch and chocolate sauce in layers, I was (hopefully!) able to satiate a sweet tooth.


 Very simple, very quick, and highly recommended for everyone to try at home!

A bunch of roses in the form of a cake


A cake that I (Rosie) made for my Mother on her birthday last year. She loves chocolate, so I decided to make her a chocolate fudge cake with white chocolate icing, piped in roses on the top to make it just that little bit more special.

Easter Cupcakes

It was discovered on Friday afternoon that Easter eggs appear to have sold out awfully quickly this year. Since we (myself and my boyfriend) had been away over the last week, celebrating a friend's Birthday, we had left our Easter egg purchases a little too late. This wouldn't really be a problem, but he had already told his Mum he would buy her an egg.

So, instead, I offered to bake! The results of this morning's (yes, a day late) baking session:





These are just a simple vanilla sponge (with a teaspoon of baking powder to make them nice and light) topped with regular butter cream. I am yet to master the art of making the perfect pipe-able icing (That is Rosie's forte!), so this icing was still a bit too soft. I also do not have a "grass" nozzle, so these are not exactly as I'd imagined.. but they still look cute, and are delicious - even if I do say so myself! 

I created the rabbits and chicks by filling some moulds with melted chocolate and letting them set. Obviously, the eggs are just regular mini eggs from a packet.

I hadn't baked cupcakes in quite a while, so it was very much enjoyed! Especially with the boyfriend helping with all the mixing. Hopefully next time I can successfully make a stiffer butter cream...
